***Why are pinbones in our sockeye fillets? We fillet our salmon immediately after harvest (so that you get the freshest and safest sockeye possible). However, this means the tendons are not broken down enough to remove the pinbones (line of bones in front two-thirds of the fillet) as they would be at shore-side processing plant (three to four days after harvest). Fortunately, the pinbones can be removed with tweezers after thaw or removed with fingers after cooking. For more info, see our Cooking Tips page.
