Each order is 10 lbs of individually vacuum packed portions (front of fillet – has line of pin-bones)
***Why are pin-bones in these portions? We fillet our salmon immediately after harvest (so that you get the freshest and safest sockeye possible). However, this means the tendons are not broken down enough to remove the pinbones (line of bones in front two-thirds of the fillet) as they would be at a shore-side processing plant (three to four days after harvest). Fortunately, the pinbones can be removed with tweezers after thaw or removed with fingers after cooking. For more info, see our Cooking Tips page.
